Ingredients

125g Unsalted Butter - Room temperature

100g Brown Sugar

75g Caster Sugar

1 Large Egg
-
1 tsp Vanilla
-
250g Plain Flour

75g Crushed Biscoff
-
1 ½ tsp Baking Powder

½ tsp Bicarbonate Soda

½ tsp Salt

150g White Chocolate Chips
-
150g Caramilk Chocolate Chips

Biscoff Spread - for drizzle
Directions
Preheat the oven to 180 degrees Celsius fan. If you haven’t got a fan, preheat the oven to 200 degrees Celsius.
In a large bowl add butter, brown sugar and caster sugar and cream lightly.
Add one egg and vanilla into the same bowl and mix until well incorporated.
Once mixed add plain flour, baking powder, bicarbonate soda, salt, and crushed Biscoff. If you are using a mixer, mix the dough until the dough is coming clean off the sides of the bowl.
Once the dough has formed, add the white chocolate chips and the caramilk chocolate chips until well incorporated.
Now that the dough is formed. Weigh the dough into roughly 80g-85g and shape into a ball.
Once all dough is rolled into balls. Place into a container lined with baking paper for a least 30 minutes to 1 hour.
When ready, place the cookie onto a lined baking tray and bake in the oven for roughly 10-14 minutes, or until slightly golden. Don’t worry if the dough feels like it is uncooked, it will firm when cool.
While waiting for the cookies to bake. Spoon some Biscoff spread into a bowl and microwave for roughly 20 seconds.
Once the cookies are ready, drizzle the cookie will the Biscoff spread and top with crushed Biscoff crumbs.
Now you can enjoy your slightly warm cookie with an optional glass of milk.
