This dessert has got to be one of my most requested recipes. It is simple, fail proof and have you, your family and friends wanting more.
It is fluffy on the inside but has a chewy and crunchy outside, topped with whipped cream and what ever fruit you fantasy.
Ingredients
Meringue

4 egg whites

300g caster sugar

1 ½ tbsp of corn flour

1 tsp of vanilla extract

1 tsp of white vinegar
Whipped Cream
-
600ml thickened cream
-
70g caster sugar
-
1 tsp vanilla extract
Toppings
-
Berries/ fruit of you choice
-
Passionfruit pulp
Directions
Making the meringue
Pre heat the oven to 140°c fan forced.
Into a large stand mixing bowl, add 4 egg whites, 300g caster sugar, 1 ½ tbsp of cornflour, 1 tsp white vinegar and 1 tsp of vanilla extract. Whisk on high speed for 10 - 15 minutes until firm peaks.
Note: You can use a hand mixer instead of a stand mixer, it just may take longer to get the firm peaks.Line a tray with baking paper and use the meringue to stick the corners of the baking paper down. This will prevent the corners flying and sticking into the meringue while baking.
Scoop and spread out the meringue onto the line baking tray, in a 8 inch circle. Flattened the meringue to roughly 3cm - 5cm tall, making sure it is roughly the same height all a round.
Put the tray in your preheated oven for about 45 minutes to 1 hour, or until slightly golden with a few cracks.
Once the Pavlova is ready, take it out the oven and let it cool.
Whipped Cream
Into a large stand mixing bowl, add 600ml of thickened cream, 70g of caster sugar and 1 tsp of vanilla extract. Whisk on medium speed until soft to medium peaks.
Note: Carefully watch the cream, as cream can over whip and look curdled.
Toppings
Wash and slice your fruit for your desired look. I used strawberries, blueberries, blackberries, kiwi fruit and passionfruit pulp.
Once the meringue is now cool. Scoop the whipped cream onto the meringue and spread it around the surface.
This step is where you can get creative a place your fruit in your own desired way. I like to sprinkle them evenly on, however you can place them however you like.
